With the start of the new year, we’ve made it a goal to incorporate clean eating into our daily routine. Lucky for us, Manhattan has a whole host of offerings that make Meatless Mondays a delicious and effortless feat, and though you don’t have to completely cut out your favorite steak or cheesy comfort food, these restaurants prove there’s far more to vegetarian offerings than bland veggie burgers and tasteless tofu.

 

Dirt Candy

 

Amanda Cohen, a chef who has made a name for herself as a plant-focused pioneer, brings cutting-edge offerings with an inspired menu at Dirt Candy. Delicious enough to sway even the most carnivorous of eaters, this Lower East Side eatery welcomes guests with chic, modern design and brightly colored plates. Indulge in either of the restaurant’s tasting menus that feature a medley of the chef’s greatest hits, or opt for an a’la carte affair. We recommend the crave-worthy Spinach Mille Feuille, made of spinach puff pastry, super-concentrated spinach mousse, smoked pistachio butter, a lilac spinach, dehydrated grapefruit, and smoked pistachio salad.
